Paella Infalible

A paella is a small gastronomic wonder to share with family and friends. When it is good, there is not a single grain left over. But making an authentic Valencian (Spanish) paella that is tasty and also has the right firmness just right is not straightforward, as the technique for cooking Valencian 'dry rice' dishes on a paella has no equivalent in any other cuisine.
